Gelatin is a natural substance derived from animal bones and skin, primarily composed of protein. It is commonly used in home baking to help solidify ingredients. Gelatin gives foods a soft, elastic texture, making it ideal for recipes like mousse and pudding. There are two main forms of gelatin: gelatin sheets and gelatin powder. The primary difference between them is their physical form.

The formation of hydrogen bonds in edible gelatin effectively prevents the precipitation of whey and contraction of casein. This helps maintain the uniformity of the product by preventing the solid phase from separating from the liquid phase, thereby enhancing the structure and stability of the finished product. When added to yogurt, gelatin can prevent whey separation and improve both the structure and stability of the yogurt.
Tips
When preparing fruit mousse, be aware that certain fruits, such as kiwi and papaya, contain enzymes that can break down the protein in gelatin, preventing it from setting properly. To avoid this issue, it’s advisable to cook or boil these fruits before incorporating them into your mousse.
If you’ve soaked gelatin but don’t plan to use it right away, store it in the refrigerator. When you’re ready to use it, simply take it out and proceed with your recipe.
